A Taste of Sunshine
Here in Southern California the sun is shining and winter is no where to be found. We did have a couple days of glorious brooding clouds and sweet nourishing rain. During that time I decided to play around with some not in season organic summer fruits. I had some frozen organic peaches waiting to be used. They were frozen during the peak of summer so they retained unbelievable flavor. This peach crumble is free of gluten, and refined sugar and as always 100% Vegan. Winter or summer give this recipe a go! The ingredients are very interchangeable, you can use berries, cherries, or apples instead of peaches. If you are not vegan you can use honey instead of maple syrup, you can add cloves or nutmeg anything that makes you swoon! I look forward to seeing all of your creations! The Goods:
-Filling-
3 10 Ounce bags Frozen Organic Peaches or if peaches are in season 1.5 pounds fresh peaches skinned and sliced into one inch slices!
½ cup coconut sugar
¼ cup maple syrup
4 tablespoons fresh squeezed orange juice
Zest of 1 lemon
Zest of 1 orange
1 teaspoon cinnamon
1 tablespoon arrowroot powder
-Crumble topping-
1 cup coconut shreds
1 cup gluten free rolled oats
¼ cup pecans
6 pitted dates
1 tablespoon coconut oil
¼ cup pecans
1-2 tablespoons maple syrup
Get Cooking:
Preheat oven to 350 Fahrenheit
Heat a cast iron pan on medium- low heat. Add all of your filling ingredients except the arrowroot. Mix gently to combine and then let the flavors begin to form in the pan. You can taste along the way and add more coconut sugar or maple syrup or more zest if you feel it needs it! Allow to combine for about 8-10 minutes. While the filling is on the stove, go ahead and prep the crumble. Put all ingredients in the food processor and pulse to combine. You want it to be sticky but not wet. Add more maple syrup or coconut oil if too dry! Set aside. After your filling is fragrant in the pan add the arrowroot powder and stir to combine. Select your favorite pie pan and rub a little coconut oil to stop anything from sticking. Press some of the crumble on the bottom of the pan and then add your peach filling and top with remaining crumble. Put in your preheated oven for 20-25 minutes until bubbling and golden brown on top. Feel free to top with Coconut whip cream or serve with Almond or coconut ice cream! A divine treat that is filled with nutrition! Enjoy!
