Greek Quinoa Salad with Tzatziki
Color + Flavor. Two things I love more than most anything (except my husband, dogs, and well you) in the universe! In my world food should be ALIVE with color. The flavors should compliment and heighten the overall experience. This radiant salad is packed with protein, vitamins and minerals. Dill and parsley are both exceptional at balancing the digestive system, the Tzatziki dressing is made with Vegan Greek Yogurt and packed with probitoics. Cucumbers and radishes are both known for creating glowing skin as well as aiding in healthy detoxification. And you will never know just how healthy this salad is after you take your first bite. Its decadent and rich with flavor and a dream to look at! Perfect for lunch or dinner and easily packs for on the go adventures!
-The Goods-
1 cup Tri-Color Quinoa
2 cups Water- or Veggie Stock
4 Persian Cucumbers
1 Bunch Radishes
2 small gems of romaine lettuce
1 bunch dill
1 bunch parsley
Juice & zest of one lemon
1 tablespoon Olive Oil
1 cup So Delicious Plain Greek Yogurt
-Get Cooking-
In a medium saucepan make your quinoa. Boil your water or stock, rinse your quinoa and add to boiling liquid. Allow to boil for 5 minutes then reduce to high simmer and cover. Quinoa takes between 15-20 minutes.
While your Qunioa is getting delicious you can prep all your beautiful veggies. Feel free to slice your radishes, cucumbers, and lettuce however you feel is pleasing to the eye.
You can also make your Tzatziki. In a medium bowl combine yogurt, chopped cucumber, minced dill, minced parsley, lemon juice, lemon zest, olive oil. Stir to combine then season with salt + pepper to taste.
Once your quinoa is cooked through pour into large bowl and place in fridge or freezer to cool down. Once cool mix in a bit of the Tzatziki, a few of the radishes, cucumbers, lettuce, and herbs. Toss gently until combined. Top with the rest of your lettuce, radishes, cucumbers, Tzatziki and herbs!
