I Am Dazzling- A Playful Rendition of Cafe Gratitude's Divine Salad

You are dazzling. You are exquisite and refined and wild and wonderful. Cafe Gratitude always knows how to make you feel absolutely exceptional. The I am Dazzling is by far one of my favorite salads ever. It is simple food packed with flavor and delight. Every bite a taste experience. The creamy cashew dressing with the cool romaine and the buttery avocado all rounded off with the nutty Brazil Nut Parmesan. This salad was made to please. I add in a couple herbs because why not? I cannot wait for you to dive into this gorgeous salad and remember that you are in fact DAZZLING! xo
I am Dazzling
The Goods:
3 heads romaine lettuce
5 basil leaves ribboned
a handful of parsley chopped
2 avocados
2 cups soaked cashews
1 cup water
1 ½ tablespoons garlic
1/3 cup lemon juice
Zest of one lemon
2 heaping tablespoons ground pumpkin seeds
2 teaspoons pink salt
1 teaspoon black pepper
2 cups dried Brazil nuts
2 cloves garlic
1 teaspoon pink salt
1 jar organic capers
Get Cooking:
Soak your cashews for at least 1-2 hours. Once they are soaked and rinsed add them to your vitamix blender along with the water, lemon juice and zest, pumpkin seeds, the tablespoon and a half of garlic salt pepper, and a tablespoon of capers. Blend until creamy.
For your Brazil Nut parmesan put brazil nuts, 2 cloves of garlic, and salt into a food processor. Process until it is a sand consistency.
Chop and wash your romaine and toss lightly with lemon juice, another tablespoon of capers, and a couple tablespoon of brazil nut parmesan. Toss in creamy cashew dressing and top with avocado! You can add blackened tempeh for a whole other dimension of flavor!
