Decadent dark chocolate studded with your choice of little gems. The perfect treat to escape in after  a long day. I made these little treats to honor an amazing company who will soon be featured on my Inspiration page. Give Bags is an incredible giving company that makes adorable little brown bags with sweet words printed on them and every bag supplies a meal to someone who would otherwise have to go without.  I am in love with the concept. And the bags are also perfect to use for giving yourself. Wrap up some goodies and sandwiches and put them in these special bags and give them out to people in need in your community. Jeweled Chocolate Medallions 

The Goods:

1 bag organic vegan fair trade chocolate chips 

1 tablespoon coconut oil 

Toppings of your choice my favorites are goji berries,  dried cranberries, raw pumpkin seeds, raw walnuts and pomegranate seeds when they are in season! 

Get Cooking:

If you have a double broiler you can melt your chocolate and coconut oil in the broiler. If not get a medium sized saucepan and a heat proof bowl that fits snugly on the top of the saucepan. Add a bit of water to the saucepan and bring to a heavy simmer. Place the bowl with chocolate and coconut oil on top and allow the chocolate and coconut oil to melt. You will have to stir occasionally.  It will take about 10 minutes for the chocolate to melt completely. Once smooth take off heat. Line a couple cutting boards that fit in your freezer with parchment paper. Using a tablespoon spoon chocolate into medallions on the parchment paper. Now design with all your goodies! Once your medallions are just how you want them, place them in the freezer for an hour or so. Next step, devour. <3
