Risk. Some of us live by risking big everyday. Others are more weary and watch closely before they jump.  One way or another every one of us has to take a risk at some point in our lives. We risk our hearts when we fall in love, we risk income when changing our career, we really risk our delicate lives every time we step out the front door.  Most risks...We don't really think about them, others we contemplate in our minds for days, weeks, even years. Its funny too because we sit on ideas, dreams, challenges like we have time to spare! We truly do not. What we are capable of today, we very well may not be capable of tomorrow. This recipe was a bit of a cliff dive. I wanted to create something spectacular to celebrate reaching nearly 2,000 followers on Instagram. I am so thankful for all my followers, for the people I have met on this incredible platform. I wanted to really do something that pushed the limits on what vegan food truly is. Which in my eyes, is a thing of beauty. Its the norm. It is magic.  This recipe utilizes a quintessential summer time fruit and turns it into something lightly decadent. Poke is  traditionally a raw tuna dish. Cubed raw tuna is tossed with lime juice, chili, sesame oil, green onions, soy sauce, and ginger.  It is a very common dish in beautiful Hawaii and my family  LOVES it. I have been a vegan for over seven years and I can't even remember the last time I had it. But I do remember big flavors. My mother helped me come up with this amazing idea, and she was fell in love at the first bite. She demanded I take it up to Bristol Farms and encourage them to serve it alongside traditional poke.  Seriously awesome compliment. I just know you will all love this as much as we all did! It is refreshing, and absolutely gorgeous on a balmy summer evening! Enjoy! 

The Goods: 

1 medium organic watermelon ( Seriously organic makes ALL the difference for flavor) 

1/4 cup fresh squeezed lime juice  (Or to taste) 

2 limes zested 

5 sliced green onions 

1/2 red onion minced 

1 tablespoon of fresh minced ginger 

1/4 of a small jalapeno that has been deseeded. (If you like things that pack a punch add more at your own risk! ;)) 

1 full bunch of cilantro chopped 

1/4 teaspoon red chili fakes

1 teaspoon of pink salt (or to taste) 

2 teaspoons Tamari

Top with pieces of rock pink salt 

2 Hass Avocados for stuffing (Again organic Avos make all the difference) 

Get Cooking: 

First off you want to get your watermelon cut into cubes. 1/3 to  1/2 inch sized cubes. Place them in a large bowl and pour the lime juice over them while you prep your other ingredients. Thinly slice your green onions and throw in the bowl with your watermelon, mince red onion, ginger,cilantro, and jalapeno(I use gloves) , and put in watermelon bowl. Toss gently. Add salt, pink salt and tamari and toss again. Taste and add any flavor you  need more of. I sometimes add a tablespoon or more of lime juice! Cut avocados and take out the pit. Stuff the watermelon poke inside top with rock pink salt and a little more lime and cilantro.  Devour! xo
